
Pappy was definitely a meat and potatoes man. He loved his steak and he loved a good baked potato, but he was so good at making a summer favorite, potato salad. The secret ingredient was in one of his sayings: “If you’re going to live life, relish it!” That’s how he did his potato salad-he “relished” it! So keep on reading for his “famous”, even if only in his family, potato salad. I bet it’ll be “famous” in your family too!
Pappy’s PS
2-3 pounds red potatoes, left with peel on
1/2 cup thinly sliced celery
1/3 cup sliced green onion
2 hard boiled eggs, chopped (I just throw these in with the potatoes during the last 10 minutes of cooking)
1 cup mayonnaise
1 Tablespoon yellow mustard
1/2 cup sweet pickle relish (trust me)
Salt and pepper to taste
Boil potatoes about 30 minutes, just until tender, not mushy. Drain, cut in half to cool, cool completely!
Stir together remaining ingredients, add to COMPLETELY cooled chopped potatoes. (Bite size pieces, please!)
