
Ok, I told you Pappy’s favorite saying was use what you got. Well I had salsa, I had chicken and I have cheese (of course) so now I have Salsa Chicken!
Don’t need too much of a recipe, but here goes…
1 boneless breast per person
Little taco seasoning mix
1 Tablespoon salsa per breast
1 Tablespoon cheese per person ( more if you’re like me!)
Sprinkle a little taco seasoning on each breast, cook in medium skillet in a little oil about 5 minutes per side.
Top with 1 Tablespoon salsa, cook til meat thermometer says 165 degrees. Sprinkle with cheese and serve!
